Make these delicious pancakes quickly and easily for memorable family breakfasts

 

Move over cereal, because pancakes are on the menu today.

When our children were little, pancakes were on the menu nearly every Saturday morning. While Papa and Mama were enjoying a little weekend alone time, the kids would be shaking their sleepy heads and starting to feel those morning hungry rumbles.

In their little minds, the oldest were thinking about how to get Mom out of bed, and into the kitchen. We’d hear little bumps and whispers that told us this was all going on. One by one, they would peak their fuzzy little noggins into our room, and then sit on the end of the bed.

Along would come another sleepy looking one. Sometimes and older child would get a younger one out of the crib. Pretty soon there would be a party on the end of the bed. Then I would hear the familiar phrase, “Are you going to make pancakes?”

Well of course I was going to make pancakes. It rarely failed, and there are great memories of kids having tickle fights with Papa, while Mom listened to their giggles and make a fresh, hot breakfast. Idyllic sounding, but I’m not fibbing you one bit.

Now days we have a nearly empty nest. No more kids jumping on the bed. A couple of the guys work PM shifts and aren’t awake too early. I don’t always make pancakes for breakfast, but this recipe transports me back of few years when I was feeding our large family on a budget. And pancakes need not be for breakfast only. My husband and I will have a “breakfast for supper” night every once in awhile. So easy!

Top with real maple syrup for a delicious treat. We also love Wisconsin Hickory Syrup, which has a light, sweet taste.

Add fresh berries in season, walnuts, chocolate chips or make up your own variation.

Light and Fluffy Buttermilk Pancakes
Pancakes are the ultimate breakfast on cold winter days. This recipe transports me back to Saturday mornings when our kids were little. It's one of our family favorites and it's sure to become yours.

Instructions
  1. Sift together dry ingredients and set aside.
  2. Beat eggs.
  3. Melt butter.
  4. Combine eggs, buttermilk and melted butter.
  5. Make a little well in the middle of your dry ingredients, add the wet ingredient and combine.
  6. Heat a lightly oiled griddle over medium high heat. A cast iron skillet works well. You'll know the skillet is hot enough if a couple drops of water sprinkled on the pan skip around and then evaporate. For crowds an electric no-stick griddle, set at 375 degrees, works well.
  7. Pour approximately 1/4 cup batter on the skillet for each pancake. Brown both sides and serve while hot.
Recipe Notes

For Best Results

One secret for lightest and fluffiest pancakes is to not overwork your batter. Stir to combine wet and dry ingredients. You don't need to get out the lumps in order to have a good pancake.

Fry the first side of your pancake until bubbles form and pop. If you need to sneak a peak, you can do so from the edge without lifting up the whole pancake. For the best results, you only want to flip pancakes one time.

Once your griddle is hot and oiled, you will not need to add oil for each pancake. If your griddle gets dry and pancakes stick, add a few drops of oil, but you'll rarely need to.
