Christmas Cookies Coconut Flour Macaroons

My husband loves macaroons and these are some of the most amazing cookies I’ve ever tried. The coconut flour has a naturally sweet taste, so while you could use sweetened coconut, I really prefer them using the unsweetened coconut. 

Chilling the dough a little and using parchment paper on a baking stone gives them a nice shape. Get out milk or coffee and enjoy!


½ cup butter softened
1 cup sugar
4 eggs
1 tsp. vanilla
½ cup coconut flour
2 cups unsweetened coconut
Heat oven to 375 degrees F.
  • Cream together butter and sugar.
  • Beat in eggs and vanilla.
  • Stir in coconut flour and coconut. Mix thoroughly.
  • Drop with cookie scoop or teaspoon onto parchment covered baking sheet.
  • Bake for 12-15 minutes watching closely the last few minutes of baking.
  • Cool on wire rack.
